Fresh Fig and Avocado Salsa

Ingredients

  • 2 fresh jalapenos
  • 1 3/4 cups diced fresh California figs
  • 1 tablespoon fresh lime juice
  • 1 firm ripe avocado, diced
  • 1 fresh ripe tomato, diced
  • 2 teaspoons granulated sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder

Procedure

Remove seeds and ribs from peppers and slice very thin crosswise. Combine all ingredients in a bowl; mix to blend well. Chill for several hours.

Note:

Recipe as prepared above is low in saturated fat, cholesterol, and sodium.

Yields: 2 1/2 cups
Serves: 10 (1/4 cup each)
