Fresh Fig and Avocado Salsa
Ingredients
- 2 fresh jalapenos
- 1 3/4 cups diced fresh California figs
- 1 tablespoon fresh lime juice
- 1 firm ripe avocado, diced
- 1 fresh ripe tomato, diced
- 2 teaspoons granulated sugar
- 1/4 teaspoon salt
- 1/2 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
Procedure
Remove seeds and ribs from peppers and slice very thin crosswise. Combine all ingredients in a bowl; mix to blend well. Chill for several hours.Note:
Recipe as prepared above is low in saturated fat, cholesterol, and sodium.Yields: 2 1/2 cups
Serves: 10 (1/4 cup each)
