Spicy Fig Barbecue Sauce

Ingredients

  • 1 tablespoon butter
  • 1 medium onion, coarsely chopped
  • 1 dried habanero pepper, finely chopped
  • 1 cup cane vinegar or cider vinegar
  • 1/2 cup light or dark molasses or brown sugar
  • 4 cups stemmed fresh California figs
  • 2 bottles dark beer (12 ounces each)
  • Kosher salt; to taste
  • Freshly ground pepper; to taste

Procedure

Melt butter over high heat in large saucepan; add onion, habanero and vinegar, and cook for 6 minutes or until onion is caramelized. Stir in vinegar and molasses; bring to boil, stirring occasionally. Add figs and return to boil, continuously stirring. Then, reduce to simmer and cook for 10 minutes. Add beer, and return to boil. Season with salt and pepper, and simmer for 15 minutes.

Turn into blender or food processor and process till smooth, adding water as needed. Adjust flavor with salt, pepper, habanero peppers, vinegar, or molasses.

Store in refrigerator for several weeks, as needed.
