Boulder, CO“Buy Local” for the environment, for farmers, for flavor and for fun…this is the message that will be at the center of a campaign that features farmers, a celebrity chef and a rising star restaurant in Boulder, CO. The statewide campaign begins May 12 and aims to remind Coloradoans that growing season is grilling season and where food comes from is as important as, well, your carbon footprint.
Celebrated Boulder chef Lachlan MacKinnon-Patterson (recently named a James Beard Foundation nominee for best regional chef) is Chef/Owner of Frasca, located in Boulder, Colorado and they recently made it official---they’re Colorado Proud. The designation amplifies their commitment to use locally-raised products on their menus. “Colorado Proud” is a program of the Colorado Department of Agriculture.
Chef MacKinnon-Patterson has created new recipes, utilizing Colorado-grown lamb and Colorado’s own potatoes as the centerpiece ingredients. Where ingredients aren’t available in Coloradoas with figshe has utilized only regional or domestic product. California figs grown in the San Joaquin Valley are hailed as the best in the world and are favored by chefs who no longer wish to opt for importing food a hemisphere away. The recipes prove that reducing your carbon footprint by sourcing food locally, regionally, or domestically is doable and delicious. With food being the #2 fossil food user (#1 is transportation), this issue is one that consumers can sink their teeth into and make a real difference. MacKinnon-Patterson, Chef/Owner of Frasca Food & Wine in Boulder was drawn to open a restaurant in this region in part because of the diversity and quality of agricultural products grown regionally. The publicity generated by his new creations and media appearances will provide a platform from which he can encourage Colorado residents to be mindful of the origin of their food while demystifying some of the definitions associated with “Green Dining.” Partners in this effort include the Colorado Department of Agriculture’s “Colorado Proud” program, Superior Farms’ Colorado lamb producers, the Colorado Potato Administrative Committee, the California Fig Advisory Board and Chef MacKinnon-Patterson’s Frasca restaurant in Boulder.
