Fig Paste - Regular
With Seeds or Seedless Custom Made: All California fig paste is manufactured to buyer specifications for color and taste from Adriatic, Mission, Calimyrna and Kadota figs. This assures the buyer of the best possible product for their specific usage. Custom made California fig paste guarantees freshness that cannot be matched by any imported product. California fig paste is 100% fig -- no fillers or extenders are added. Standard grinder plate size has inside diameter holes of 5/64" up to a maximum of 7/64". Moisture: 24% maximum. Packaging: Standard pack is 80 lb. corrugated fibre case with polyethylene liner completely enclosing the product. In addition, 40 lb. cases are available if requested.

Fig Paste - Seedless
The smooth texture of California seedless fig paste makes it ideal for those products where small seeds may be objectionable. In addition to regular fig product applications, it is the perfect ingredient to mix with any of a wide variety of more expensive fruits and fruit pastes to lower costs.

Fig Concentrate
A water extract of dried figs derived by leaching them with water and concentrating the extract under vacuum to a minimum of 70 Brix (70% fruit soluble solids). Color is a dark natural brown.
California fig concentrate may be reconstituted into single strength fig juice. Other popular uses are as a natural coloring and anti-staling agent, flavor enhancer, and humectant. Growing popularity in breads, cookies, sauces, cereals and a wide variety of natural products as a replacement for sucrose, corn syrup and sweeteners. Of particular interest to health food manufacturers interested in reducing sugar content in products. Storage recommended 60-70 degrees Fahrenheit. Above 75 degrees there may be a slow change in color and flavor.

Fig Powder
Two new and distinctively different fig powders are now available. Both are free flowing with 1% or less anti-caking agent. Use California fig powder anywhere more costly fruit powders might be used.

Fig Nuggets
Extruded pieces made by combining California fig paste with other ingredients such as fruit fibersolids, dextrose, cornstarch, vegetable oil and/or glycerin. The finished nuggets, about the size of a raisin, are coated with dried corn syrup for free flowing product. In addition to the standard fig flavor, a wide variety of additional fruit flavors are available.
Seedless or with seeds, the texture is colored and flavored to be representative of Blueberry, Strawberry and Raspberry. Its uses have been proven in breads, cookies, packaged mixes, cakes, a variety of confectionery items, cereals, and pudding mixes.

Sliced / Diced Figs
California figs, diced 3/8" and coated with dextrose, rice flour or oat flour for free flowing product, are 100% fig. This new product is also an excellent addition to breads, cookies, packaged mixes, cakes, and a variety of cereals, and confectionery items.
